Faster-than-driving-to-a-home-industry loaf

Never again will I resort to buying a cake from a home industry because I am too busy.

The icing tasted of nothing. Not even butter. There was definitely no cocoa, not even a hint of chocolate in the icing, so I must assume it was just the  food colourant and pretty icing  which deceived me.

There is NO excuse for lack of time when it comes to this  super- fast celebration loaf and I will never declare that I am too busy to bake again.

In fact I could have whipped this up instead of posting the recipe!

This loaf takes 2 minutes to make and another 50 minutes to bake, yielding a moist orange or lemon (your preference) loaf with a rich icing.

I made it on my daughter’s actual birthday (for friends and family, as she does not eat cake) and I called it a celebration loaf because we had so much luck on that day: Even receiving  a limited edition Nelson Mandela coin as change from our parking ticket.
2 minute celebration loaf

In a blender combine:
125g butter
1 ½ cups flour
2 teaspoons baking powder
2 extra- large eggs
190 ml sugar
Zest of 1 orange or lemon
½ cup milk

Pulse till combined, pour into a greased loaf pan and bake 180 ˚C for 50 minutes. (this can also be done by hand)

Cool completely then remove and ice

Icing
Combine till smooth and creamy:

½ tub (125g) plain Simonsberg cream cheese
3 cups of  icing sugar
2 teaspoons NoMu vanilla paste
