Cheesy Sunday night toasts
So it was not quite a  Sunday but a wintery and rainy  Tuesday holiday I made this and while ordinary toasted cheese would have made absolutely no impression, these old fashioned Cheesy toasts with freshly picked rocket and avocado were a hit.
Earlier that day, after having breakfast at Fournos, I had grabbed a round farm style French bread on the way out and so I was able to cut perfect doorstops for this lazy meal. I would not recommend ordinary bread so grab a loaf and freeze it for a rainy Sunday, if you are in the Fournos area (any excuse for a chocolate croissant and coffee)

Not-your-low fat Sunday night cheesy toasts 

Per person
1 thickly sliced piece of Fournos farmhouse French loaf
½ cup extra mature cheddar
2 tsp cream/cottage cheese (optional but so rich and creamy)
1-2 TBS miracle whip or a tangy salad cream
1 tsp whole grain mustard

  1. Combine the ingredients and dollop thickly on the slice of bread
  2. Place on a non stick mat in the oven and bake at 220 ˚C for about 10-15 minutes or until golden and oozing
  3. Serve with a side salad or rocket leaves and a dressing
