tomato tartlets in woolworths pastry shells
Serve these with some salad greens and a dressing either as a starter or as a side. 

Saucy little tartlets
1 packet savoury pastry cases from Woolies

1 packet (200g) rosa tomatoes
1 onion
2TBS dark brown sugar
60ml balsamic vinegar
Oil to fry onions
125ml cream (½ cup)
1 egg

Goats cheese (not the cream cheese roll, the one with the rind-crotin) 

  1. Heat some oil in a non stick pan and add onions
  2. Add sugar and vinegar, cover and cook until caramelised.
  3. Divide the tomatoes and cooked onions between the cases
  4. mix the egg and cream, season and pour into the cases
  5. bake at 200 ˚C for 20-25 minutes or until the centre is almost set
  6. slice goats cheese and place on top of tarts while warm

COOK’S Notes: you could also shave parmesan on top, drizzle a bit of sweet chilli sauce on the side, crumble some feta or just leave plain
