easy chocolate cupcakes
This actually yields a little bit more than 12, but try not over fill the wrappers (ensure mixture comes up half way, even if there is a little mixture left over…to lick of course)

 
Chocolate cupcakes
125g butter
½ cup water
¼  cup cocoa
1 cup sugar
1cup flour
Pinch of salt
¼  cup plain yoghurt
1 egg
½  teaspoon baking soda
½ tsp vanilla extract or 1 tsp vanilla essence
 

  1. Place butter, water and cocoa in a bowl and microwave till butter is melted.
  2. Place flour, sugar and pinch of salt in a large bowl.
  3. Mix cocoa mixture into dry ingredients by hand.
  4. Add yoghurt, eggs, baking soda and vanilla and mix well.
  5. Line a muffin pan with cupcake wrappers and  spoon mixture into each
  6. Bake at 180 ˚ C for approximately 20 minutes or until a skewer comes out clean.
Icing
160 ml or 2/3  cup cream
200g dark chocolate

  1. heat cream in a pot, add chocolate and remove from heat
  2. stir until the chocolate has melted
  3. spoon over cupcakes
