This bread is so simple and quick to prepare-no sifting, no machinery and no scale required, just my kind of recipe! 

Serve it for tea, breakfast or dessert,  with thick butter….

Strawberry bread

1½ cups flour
1 cup sugar
½ teaspoon baking soda
½ teaspoon salt


Place in bowl
Combine the following ingredients and add to dry mix:
2 eggs
2/3 cup oil (I use Canola)
1 tsp orange or lemon zest
1 tsp vanilla extract

Stir in:


1x 250g punnet strawberries, hulled and cut into smaller pieces
½  cup chopped pecans
Bake at 180 ˚in a silicone loaf pan for 1 hour and 10 minutes

Serve with thick butter

This loaf is DIVINE!!! Very moist and is a great variation to the banana loaf that is always baked. My daughters did not like the nuts but that is THEIR PROBLEM.

Ah thanks Joan. Must admit that everytime I see this picture I start craving the bread. its so unusual and delicious, and you can leave the nuts out...
