Make this starter in advance and relax on Christmas day. There are various ways to serve this, so pick the option that’s easiest for you. Keep a Woolies country loaf in the freezer and bake on Christmas to ensure freshly baked bread without needing to head for the shops.

 Layered festive Dip served with crusty bread
Good quality thick cream cheese
Basil pesto
Sun-dried tomatoes finely chopped or processed-add water or oil if too thick
Toasted pinenuts

 
Serving options:

A) terrine style

1.       Line a bowl with clingwrap – size of bowl will depend on amount of ingredients used – and spoon in half the cream cheese followed by a layer of pesto, and finally the remaining cream cheese.
2.       Turn out onto a platter when ready to serve and top with sun dried tomato. This can be done up to 3 days in advance and placed in the fridge with some clingwrap.

 B) Served in glasses

1.     Small individual ones (like the Fanél @R4.50) can be used and then layered with the mixture or use martini glasses to serve 4-6 people
2.       Place a sprig of rosemary on top sticking out the glass for garnish and serve on a tea saucer with some crusty bread and even stuffed olives on the side.
3.       You could also use a large star cookie cutter to make big toasted croutons to place next to the glasses.
4.       Dust the rosemary with icing sugar so as to resemble snow on Christmas trees
