There is no doubt that the name of this dessert refers to the look, which can be described as messy. Made with supposedly leftover crushed meringue, whipped cream and fruit, it’s so delicious it is easy to forgive the appearance. 

I recently tasted a friend’s version, to which yoghurt and blobs of caramel were added to the cream. It was delicious and every person had seconds. I had not thought of using yoghurt in this dish and it gave me an idea for a diet dessert, which  does contain a bit of sugar but is fat free. So thank you to Fran for the inspiration and the great meal.

Fat free Eton Mess (4)
4 wine glasses or bowls
1 packet small meringues
1 punnet strawberries (you can also add mango and berries)
1 tin granadilla pulp
3 TBS honey
Fat Free yoghurt (I used plain but you could also use Woolies vanilla)

  1. Hull and slice strawberries and add the honey to the granadilla pulp to thicken
  2. layer the meringue, yoghurt and fruit and drizzle with the pulp
 If you decide to go full fat then whip cream and layer with fruit, meringue, Woolworth’s full fat lemon curd or peaches and cream yoghurt and blobs of caramel treat. You could also purchase Woolies berry or granadilla coulis to drizzle on top.
