So my husband and I popped into a little Indian shop to buy Bindi’s for my Bollywood crafts and were both quite surprised at long queue –all waiting to buy a samoosa. An oily, fried samoosa. I was absolutely disgusted. With a cluck of the tongue and a shake of the head we popped off to join my friend for skinny cappuccino. On the way back to our car, I popped in again for a spice I had forgotten on my first trip. This time I turned and asked my husband if he would like a samoosa and he nodded with a smile. 

The crowd of people reassured me that the samoosa’s were
A) Fresh -because of the turnover of people and samoosas
and

B) Not as oily as I must have originally imagined  as there were skinny woman in the queue.  

I folded.

I bought an oily cheese and corn samoosa for myself and gobbled it up with glee! If you love the taste but not the calories, try this baked version made with phyllo. 


 
Baked Cheese and Corn Samoosa’s
1 large tin sweetcorn kernels (rinsed and drained)
½ cup coarsely grated mature cheddar cheese
2 tablespoons chopped spring onions
1 tablespoon fresh mint, chopped
1 tablespoon fresh coriander, chopped
2 green chillies, seeded and finely chopped
1 medium onion, finely chopped
½ teaspoon cumin seeds
1 tablespoon oil
½ teaspoon garam masala
salt as needed
Woolworths phyllo pastry
Melted butter 
 
  1. Heat oil, add cumin, chillies and onion and fry for 5-8 minutes or until onions start to soften and become golden. Add sweetcorn
  2. Remove from heat, add rest of ingredients except cheese, mix well and season.
  3. Allow to cool then add cheese. Brush one sheet of pastry with melted butter.
  4. Cut into 4 long strips using a sharp – not serrated – knife. Place a heaped teaspoon of filling in the bottom right hand corner of each pastry strip, fold over in a triangle and then fold up entire strip enclosing filling in a pastry triangle.
  5. Repeat with remaining pastry until filling is used up. Brush samoosas with melted butter and place on baking tray.
  6. Bake at 180 ˚C for 20 minutes or until golden and serve or freeze till needed.
